This Blueberry Toast recipe is the easiest and most delicious way to start your day. Jammy blueberries sit atop of creamy yogurt and toasty sourdough bread, giving you great textures and bright flavors.

- 4 slices bread any type will do we prefer sourdough
- 1 ¼ cups blueberries frozen
- ⅔ cup coconut yogurt or any type of yogurt
- 3 tablespoon honey omit if vegan
Gather your ingredients. Toast the slices of bread either in the toaster or on the grill.
Heat the blueberries in the microwave on full power for 1 ½ minutes, until soft with lots of juice. Then let them cool for about 5 minutes.
Spread a thick layer of yogurt over each slice of toast.
Spoon the warm blueberries on top of the yogurt layer.
Drizzle over the honey and serve.
- If preferred, you can also use fresh blueberries and simply add them to the toast fresh without heating them up.
- Toasting the bread first gives it time to cool whilst you heat up/cool the blueberries. Adding your toppings to the slightly cooled toast will prevent it from becoming soggy.
- Vegan and Dairy Free Options - Use Vegan or Dairy-Free yogurt, we used coconut in this recipe. Also OMIT the honey to make vegan. Be sure to check the label of the bread, oftentimes bread is made with egg, which you would avoid if vegan.
- Elevate the flavor by adding in some fresh Thyme or Rosemary on top of the blueberry mixture.
