Ingredients
  

  • 3 tbsp butter or vegan butter
  • ½ cup vegetable stock
  • 1 tsp garlic powder
  • 2 tsp Cajun seasoning
  • ¼ tsp smoked paprika
  • 3 cups frozen corn kernels
  • Salt and pepper to taste

Instructions
 

  • Melt the butter over medium heat in a large frying pan. Add the vegetable stock and spices and stir until well combined.

  • Add the corn along with some salt and pepper to taste. Stir to coat the corn then leave to simmer, stirring occasionally, until all the liquid has been absorbed (about 8-10 minutes).

  • Transfer to your serving bowl of choice and top with fresh chopped herbs if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days. 
  • Add extra spice if you like by stirring in fresh chopped chili peppers or your favorite hot sauce. You can also add additional Cajun seasoning during cooking or just before serving. 
  • There's no need to thaw the corn kernels. Since they're small, they'll thaw quickly in the frying pan.
