Use these sofritas to make copycat bowls at home! It is insanely easy and insanely delicious! It also is vegan and has gluten-free options!

Ingredients
  

  • 2 tablespoons oil
  • 1 cup red onion
  • 1 bell pepper any color
  • 1 block extra firm tofu
  • 2 tablespoons soy sauce gf if needed or coconut aminos
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon garlic salt
  • 1 tablespoon liquid smoke
  • 1 tablespoon tomato sauce
  • ½ cup salsa

Toppings for Burrito Bowls

  • rice or quinoa
  • black beans
  • lettuce
  • tomatoes
  • guacamole
  • cilantro

Instructions
 

  • In a medium saucepan over medium heat, add the oil, onions, and bell pepper. Sauté until the vegetables are softened.

  • Press the tofu for 10 minutes. Then, place the tofu in the saucepan and mash with a fork.

  • Add the soy sauce, apple cider vinegar, garlic salt, liquid smoke, tomato sauce, and salsa. Stir to combine and continue to cook until all ingredients are heated through.

  • Serve your sofritas in a bowl with rice, black beans, lettuce, and cilantro. Enjoy!
