- 2 medium sweet potatoes
- 1 small onion diced
- 2 cloves garlic crushed
- 14 ounces silken tofu
- ¼ teaspoon turmeric
- 1 cup milk or dairy free alternative
- 2 tablespoons nutritional yeast
- salt and pepper to taste
Pierce the skin of the sweet potatoes a few times with a knife and microwave them on full power for 15 minutes or until completely cooked through. Slice the potatoes in half and carefully scoop out the flesh, discarding the skins.
Add a little oil to a frying pan and cook the onion on a medium heat until softened – about 5 minutes. Then add the garlic and cook for another minute.
Add the sweet potato flesh, cooked onion and garlic, and all remaining ingredients to the bowl of a food processor.
Process until completely smooth.
Transfer to a bowl or storage jar to be used in your dish of choice.
- Cooking sweet potatoes in the microwave is very simple, but you can also roast them in the oven, or peel, dice, and boil them if you prefer.
