This delicious and comforting 3 Ingredient Potato Soup is a breeze to make with just a few simple and affordable ingredients.
Ingredients
- 18 ounces 500grams White Potatoes, peeled and diced into 1/2 inch cubes
- 1 large onion diced
- 4 cups vegetable stock
- You’ll also need a bit of oil and salt and pepper to taste.
Instructions
- Add a tablespoon of oil or butter to a large soup pot and fry the onion and potato on a medium setting for about 10 minutes until softened.
- Add the vegetable stock, bring to a boil then reduce the heat and leave to simmer for 15 minutes.
- Season to taste and serve with a little fresh chopped parsley and extra black pepper on top (optional).
