Mashed Potatoes with Almond Milk

Ingredients
  

  • 4 large white baking potatoes
  • 2/3 cup almond milk
  • ¼ cup vegan butter
  • Salt and pepper to taste
  • Fresh parsley to garnish optional

Instructions
 

  • Peel and roughly chop the potatoes.

  • Add the potatoes to a large pan of boiling water and simmer for 20-25 minutes or until fork tender, then drain.

  • Return the potatoes to the pan and mash roughly.

  • Add the vegan butter, almond milk and some seasoning to taste. Stir to combine then mash until completely smooth.

  • Transfer to your serving dish of choice and garnish with some fresh chopped parsley and extra vegan butter (optional).
