Tips for Making Mediterranean Sauce

  • For a thicker consistency we prefer using full-fat Greek yogurt, but if you need to cut down on the healthy fats you can use low fat if you like.
  • Use fresh lemon juice for the best flavor. Bottled lemon juice tends to have a different flavor but you can certainly use it, if you like.
  • For extra lemon flavor, use a microplane to zest your lemon.

DO I NEED TO PEEL MY CUCUMBERS? – No need to peel or de-seed your cucumbers. Just grate them all together and they will get mixed into the sauce perfectly. You will want to squeeze out any excess liquid from the cucumbers though so you don’t end up with a watery sauce.

Ingredients
  

  • ½ cup cucumbers finely grated
  • 1 ½ cups plain Greek yogurt full fat
  • ½ teaspoon garlic minced
  • ¼ teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill
  • 1 teaspoon mint chopped optional

Instructions
 

  • Grate the cucumber. No need to peel or deseed. Squeeze out any excess liquid.

  • Mix grated cucumber with Greek yogurt, minced garlic, salt, fresh lemon juice, and 1 tablespoon of dill. Mix until fully combined.
