Tips and Tricks for Making The Best Peanut Candy Clusters

  • Dark chocolate chips taste amazing in this recipe, but you can use any type of chocolate that you like! Semisweet chips are great, and for extra sweet peanut candy, try milk chocolate chips. 
  • Chopped chocolate bars are also an option, but chocolate chips are usually easier to keep on hand.
  • Flaky bits of sea salt help to balance the sweetness of the candy, and work well with the roasted and salted peanut. If you don’t have sea salt, kosher salt can also be used. I don’t recommend table salt. 
  • Use any kind of peanut butter that you have at home! All-natural or classic peanut butter both work well in this candy recipe. 
  • The microwave makes melting chocolate super quick and simple, but you can also melt the peanut butter with the chocolate in a double boiler, or a glass bowl set over a small pot of water, on the stovetop.

Ingredients
  

  • 2 cups dark chocolate chips
  • ½ cup creamy peanut butter
  • 2 cups roasted salted peanuts divided
  • 1 teaspoon flakey sea salt

Instructions
 

  • Line a baking sheet with parchment paper or a silicone mat.Add the chocolate chips and peanut butter to a medium sized microwave safe bowl.

  • Heat in 30 second intervals, stirring between each interval, until the chocolate is fully melted.

  • Add the peanuts to the melted chocolate and stir to coat the peanuts with chocolate.

  • Drop rounded tablespoons of chocolate onto the lined baking sheet. Sprinkle over the flakey sea salt, and extra peanuts if desired, and place the peanut candy in the fridge until it is set– about 30 minutes.

  • Transfer the peanut candy to an airtight container and store in the fridge for up to one week.
