Ingredients
  

  • 2 cups blueberries
  • 1/3 cup granulated sugar or coconut sugar
  • 2 tablespoons water
  • 3 cups unsweetened almond milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Place blueberries, granulated sugar, and water in a saucepan. Stir to combine. 
  • Cook over medium heat, for about 10 minutes, until the mixture has thickened slightly.
  • Strain the blueberry mixture through a fine-mesh strainer into a bowl or large measuring cup, pressing the mixture with a spoon to extract all of the juices. 
  • Add the almond milk and vanilla extract to the blueberry mixture. 
  • Stir until combined.
  • Refrigerate until ready to serve.

Notes

  • Store leftovers in the refrigerator for up to 1 week. 
  • You may prefer to chill the blueberry milk before serving, but you can also enjoy it right after straining. 
  • Feel free to adjust the amount of sugar to suit your tastes. If your berries are extra sweet, you may want less.
